- 1 lb steak, thinly sliced (ribeye, sirloin, or flank steak)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Sear the steak: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced steak and cook until browned, roughly 3 to 4 minutes. Remove the steak from the skillet and set aside.
- Stir-fry the vegetables: In the same skillet, add the remaining oil and toss in the mixed vegetables. Stir-fry for about 3-4 minutes until tender yet vibrant.
- Scramble the eggs: Push the vegetables to one side of the skillet and pour in the beaten eggs, scrambling until fully cooked.
- Combine ingredients: Add the cooked rice to the skillet along with the seared steak and soy sauce. Stir everything together, ensuring each grain of rice is coated, approximately 3-4 minutes. Season with salt and pepper to taste.
- Garnish: Sprinkle with chopped green onions before serving.
Notes
For a richer flavor, try marinating the steak with garlic or ginger before cooking. Use day-old rice for the best results.
