Description

A delightful spring frittata filled with fresh asparagus, creamy goat cheese, and vibrant herbs, perfect for brunch or any gathering.


Ingredients

  • 6 eggs
  • 1 cup fresh asparagus, chopped
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup fresh herbs (such as dill, parsley, or chives), chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk the eggs with salt and pepper in a large bowl until light and frothy, about 1-2 minutes.
  3. Heat olive oil in your oven-safe skillet over medium heat.
  4. Add the chopped asparagus to the skillet, cooking for 2-3 minutes until tender but bright green.
  5. Pour the egg mixture over the asparagus, sprinkle goat cheese and fresh herbs on top, and cook on the stovetop for 2-3 minutes until edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes until set and lightly golden on top.
  7. Let cool slightly before slicing and serve warm.

Notes

Frittatas can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before serving.
