- 6 eggs
- 1 cup fresh asparagus, chopped
- 1/2 cup goat cheese, crumbled
- 1/4 cup fresh herbs (such as dill, parsley, or chives), chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Whisk the eggs with salt and pepper in a large bowl until light and frothy, about 1-2 minutes.
- Heat olive oil in your oven-safe skillet over medium heat.
- Add the chopped asparagus to the skillet, cooking for 2-3 minutes until tender but bright green.
- Pour the egg mixture over the asparagus, sprinkle goat cheese and fresh herbs on top, and cook on the stovetop for 2-3 minutes until edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until set and lightly golden on top.
- Let cool slightly before slicing and serve warm.
Notes
Frittatas can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before serving.
