Description

Fluffy pancakes inspired by the classic Spanish churro, featuring a sugary crust and warm cinnamon flavor, perfect for indulgent breakfasts.


Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, beat together the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the flour mixture, stirring gently until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Once bubbles appear, carefully flip the pancakes using a spatula and cook until golden brown.
  7. Immediately upon removing from the skillet, sprinkle with cinnamon sugar.
  8. Stack them on a plate and serve warm, drizzled with syrup or topped with whipped cream.

Notes

Make ahead by preparing the batter the night before and storing it in the fridge. Avoid overmixing to ensure fluffy pancakes.
