Description

A comforting dish featuring golden chicken breasts on a fluffy bed of rice, enveloped in rich gravy.


Ingredients

  • 2 chicken breasts (bone-in or boneless)
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1 cup gravy
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Brown the chicken in the skillet for 5-6 minutes per side.
  4. Remove the chicken and set aside.
  5. Add chicken broth to the skillet and bring to a simmer, scraping up any browned bits.
  6. Stir in the rice, then nestle the chicken back into the skillet.
  7. Cover and cook on low heat for 20-25 minutes until the rice is tender.
  8. Serve the chicken on a bed of rice, spooning gravy over the top.
