- 2 chicken breasts (bone-in or boneless)
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 cup gravy
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season both sides of the chicken breasts with salt and pepper.
- Brown the chicken in the skillet for 5-6 minutes per side.
- Remove the chicken and set aside.
- Add chicken broth to the skillet and bring to a simmer, scraping up any browned bits.
- Stir in the rice, then nestle the chicken back into the skillet.
- Cover and cook on low heat for 20-25 minutes until the rice is tender.
- Serve the chicken on a bed of rice, spooning gravy over the top.
