- 4 large baked potatoes
- 1 pound ground beef or lamb
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 cups mashed potatoes
- Salt and pepper to taste
- Olive oil (for drizzling)
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the potatoes until tender, about 45-60 minutes.
- Cook the ground beef or lamb in a skillet over medium heat until browned.
- Add the mixed vegetables and beef broth, stirring well. Simmer for 5-7 minutes.
- Slice the baked potatoes in half and scoop out some flesh to create a boat.
- Fill each potato with the meat and vegetable mixture.
- Top with fluffy mashed potatoes and drizzle with olive oil.
- Bake in the oven for another 15-20 minutes until the tops are golden.
