Description

Comforting and hearty Shepherd’s Pie Baked Potatoes filled with savory meat and vegetables, topped with creamy mashed potatoes.


Ingredients

  • 4 large baked potatoes
  • 1 pound ground beef or lamb
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup beef broth
  • 2 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes until tender, about 45-60 minutes.
  3. Cook the ground beef or lamb in a skillet over medium heat until browned.
  4. Add the mixed vegetables and beef broth, stirring well. Simmer for 5-7 minutes.
  5. Slice the baked potatoes in half and scoop out some flesh to create a boat.
  6. Fill each potato with the meat and vegetable mixture.
  7. Top with fluffy mashed potatoes and drizzle with olive oil.
  8. Bake in the oven for another 15-20 minutes until the tops are golden.
  9. Serve warm and enjoy!
