- 3 medium Red Potatoes
- 1 cup Onions
- 1 cup Shredded Cheese
- 1/2 cup Mayo
- 2 tbsp Ketchup
- 1 tbsp Mustard
- 1 tbsp Cajun Seasoning
- 1/2 cup Pickles
- 1 cup Lettuce
Instructions
- Prepare the Potatoes: Wash and cut the red potatoes into small pieces. Steam or boil until tender, about 15 minutes, then set aside.
- Caramelize the Onions: Heat oil in a skillet over medium heat. Add onions and a pinch of salt; cook for about 10 minutes until golden brown.
- Sear the Beef: Increase heat to high, add ground beef, breaking it up while pressing into the pan. Sprinkle with half of the Cajun seasoning; sear for 4 minutes, then flip and sear for an additional 3 minutes.
- Mix the Sauce: In a bowl, whisk together mayonnaise, ketchup, mustard, and remaining Cajun seasoning until creamy.
- Assemble the Bowl: Layer tender potatoes in a serving bowl, top with seared beef and caramelized onions, then sprinkle shredded cheese on top.
- Garnish and Serve: Dress with the creamy sauce, add pickles, and a heap of fresh lettuce. Serve warm.
