Description

A refreshing salad bursting with vibrant flavors, featuring grilled chicken, fresh vegetables, and a zesty lime dressing.


Ingredients

  • 2 grilled chicken breasts
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Start by grilling the chicken breasts, ensuring they reach a juicy, fully cooked state.
  2. Once done, slice them into strips.
  3. In a large mixing bowl, combine the mixed greens, cherry tomatoes, avocado, black beans, corn, red onion, and cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well blended.
  5. Gently add the sliced grilled chicken to the salad mixture.
