Description
Tender, juicy chicken thighs marinated with smoky chipotle and zesty citrus for a flavorful dish perfect for any occasion.
Ingredients
Scale
- 3 pounds boneless skinless chicken thighs
- 1 can chipotle peppers in adobo sauce
- 4 tablespoons fresh lime juice
- 4 tablespoons fresh orange juice
- 1/2 cup fresh cilantro, finely chopped
- 6 garlic cloves, minced
- 1 medium onion, quartered
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Prepare the Marinade: In your blender or food processor, combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, smoked paprika, salt, and pepper. Blend until smooth.
- Marinate the Chicken: Place the chicken thighs in a large mixing bowl and pour the marinade over. Make sure each piece is generously coated. Cover and let it marinate for at least 30 minutes, preferably 2-4 hours or overnight.
- Heat Your Skillet: Preheat a cast-iron skillet over medium-high heat. Add a splash of olive oil, allowing it to shimmer.
- Sear the Chicken: Carefully place the marinated chicken thighs in the skillet. Cook for 5-7 minutes per side until cooked through (around 165°F internal temperature).
- Rest and Serve: Let the chicken rest for a few minutes before slicing. Serve with your favorite sides and enjoy!
Notes
For enhanced flavor, marinate overnight. Cooking alternatives include air frying or roasting in the oven.
