Description

Ingredients

  • 3 pounds boneless skinless chicken thighs
  • 1 can chipotle peppers in adobo sauce
  • 4 tablespoons fresh lime juice
  • 4 tablespoons fresh orange juice
  • 1/2 cup fresh cilantro, finely chopped
  • 6 garlic cloves, minced
  • 1 medium onion, quartered
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare the Marinade: In your blender or food processor, combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, smoked paprika, salt, and pepper. Blend until smooth.
  2. Marinate the Chicken: Place the chicken thighs in a large mixing bowl and pour the marinade over. Make sure each piece is generously coated. Cover and let it marinate for at least 30 minutes, preferably 2-4 hours or overnight.
  3. Heat Your Skillet: Preheat a cast-iron skillet over medium-high heat. Add a splash of olive oil, allowing it to shimmer.
  4. Sear the Chicken: Carefully place the marinated chicken thighs in the skillet. Cook for 5-7 minutes per side until cooked through (around 165°F internal temperature).
  5. Rest and Serve: Let the chicken rest for a few minutes before slicing. Serve with your favorite sides and enjoy!
