- 200 g chocolate sandwich cookies, crushed
- 100 g melted unsalted butter
- 250 g softened cream cheese
- 100 g powdered sugar
- 1 teaspoon vanilla extract
- 200 ml heavy cream
- 150 g fresh raspberries (for filling)
- 50 g granulated sugar
- 1 tablespoon lemon juice
- 200 g chopped dark chocolate
- 100 ml heavy cream (for ganache)
- 100 g fresh raspberries (for topping)
Instructions
- Preheat your oven to 180°C and line a 20×20 cm pan with parchment paper.
- Combine crushed chocolate cookies with melted butter in a bowl and press into the bottom of the pan to form the crust.
- Chill the crust in the refrigerator for about 10 minutes.
- Beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Whip heavy cream in another bowl until soft peaks form, then fold into the cream cheese mixture.
- Spread the cream cheese mixture over the chilled crust and refrigerate for 30 minutes to set.
- Combine raspberries, granulated sugar, and lemon juice in a saucepan and simmer for about 5 minutes until thickened. Cool and spread over the cream cheese layer.
- Heat 100 ml of heavy cream in a saucepan and pour over chopped dark chocolate. Stir until smooth to create ganache.
- Pour the ganache over the raspberry layer and top with fresh raspberries.
- Chill for at least 4 hours before slicing and serving.
Notes
For best texture, keep ingredients chilled while preparing. Can be made a day in advance for richer flavor.
