- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 medium red onion, thinly sliced
- 4 large flour tortillas
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced red onion and sauté until translucent.
- Add fresh spinach and cook until wilted.
- In a bowl, mix the sautéed spinach and onion with feta and mozzarella cheese.
- Place a tortilla in the skillet, add the cheese mixture, and top with another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook the other side.
- Remove from skillet, slice into wedges, and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- Serve with a side of tzatziki or salsa for dipping.
- These quesadillas can be made ahead and reheated for a quick meal.
