- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 3/4 cup old-fashioned whole-rolled oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt (or to taste)
- 2 cups coarsely chopped fresh ripe mango
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons corn starch
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and lightly spray it with cooking spray.
- Melt the butter in a microwave-safe bowl for about 1 minute on high power until completely melted. Mix in all-purpose flour, oats, granulated sugar, brown sugar, and salt until combined.
- Set aside one heaping cup of the mixture for the crumble topping.
- Transfer the remaining mixture into your prepared pan and firmly pack it into an even layer to form the crust.
- Toss together chopped mango, granulated sugar, lemon juice, and corn starch in the same bowl until well-combined.
- Pour the mango mixture over the crust and spread it gently. Sprinkle the reserved crumble mix on top.
- Bake for about 50 minutes, or until the edges are set and the center is slightly jiggly.
- Cool on a wire rack for at least 1 hour before slicing.
