Description

Delicious and wholesome Mango Oatmeal Crumble Bars that harmonize the sweet taste of ripe mangoes with a buttery, crunchy topping, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt (or to taste)
  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and lightly spray it with cooking spray.
  2. Melt the butter in a microwave-safe bowl for about 1 minute on high power until completely melted. Mix in all-purpose flour, oats, granulated sugar, brown sugar, and salt until combined.
  3. Set aside one heaping cup of the mixture for the crumble topping.
  4. Transfer the remaining mixture into your prepared pan and firmly pack it into an even layer to form the crust.
  5. Toss together chopped mango, granulated sugar, lemon juice, and corn starch in the same bowl until well-combined.
  6. Pour the mango mixture over the crust and spread it gently. Sprinkle the reserved crumble mix on top.
  7. Bake for about 50 minutes, or until the edges are set and the center is slightly jiggly.
  8. Cool on a wire rack for at least 1 hour before slicing.

Notes

You can customize these bars by adding nuts or seeds. Ensure to use ripe fruit for optimal flavor.
