Description

A tropical burst of flavor with creamy mango filling atop a buttery crust, these dessert bars are perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 ripe mangoes, pureed
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, softened butter, granulated sugar, vanilla extract, and salt until crumbly.
  3. Press the dough evenly into the bottom of a greased 9×13 inch baking dish.
  4. Bake for about 15 minutes, until lightly golden.
  5. Combine pureed mangoes, sweetened condensed milk, eggs, lime juice, and lime zest until smooth.
  6. Stir in cornstarch until well incorporated.
  7. Pour mango filling over the crust and spread evenly.
  8. Bake for an additional 25-30 minutes until set.
  9. Cool completely before cutting into bars.

Notes

For a gluten-free option, substitute all-purpose flour with almond flour. Use ripe mangoes for the best flavor.
