- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 3 ripe mangoes, pureed
- 1 cup sweetened condensed milk
- 2 large eggs
- 1 tablespoon lime juice
- Zest of 1 lime
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the flour, softened butter, granulated sugar, vanilla extract, and salt until crumbly.
- Press the dough evenly into the bottom of a greased 9×13 inch baking dish.
- Bake for about 15 minutes, until lightly golden.
- Combine pureed mangoes, sweetened condensed milk, eggs, lime juice, and lime zest until smooth.
- Stir in cornstarch until well incorporated.
- Pour mango filling over the crust and spread evenly.
- Bake for an additional 25-30 minutes until set.
- Cool completely before cutting into bars.
Notes
For a gluten-free option, substitute all-purpose flour with almond flour. Use ripe mangoes for the best flavor.
