Description

A delightful dessert with three luscious layers of sponge, custard, and a golden crust, perfect for any occasion.


Ingredients

  • 4 eggs (separated, room temp)
  • ¾ cup caster sugar
  • 125 g melted butter
  • 1 tsp vanilla extract
  • ¾ cup plain flour (sifted)
  • 2 cups lukewarm milk
  • ¼ cup icing sugar (for dusting)

Instructions

  1. Preheat your oven to 340°F (170°C) and line an 8-inch square pan with parchment paper.
  2. Whip the egg whites in a clean bowl until they form stiff peaks.
  3. Beat the yolks and sugar together until pale and fluffy.
  4. Incorporate the melted butter and vanilla extract into the yolk mixture.
  5. Sift the flour over the batter and stir it in carefully.
  6. Add the lukewarm milk, stirring until smooth.
  7. Fold in the whipped egg whites gently using a spatula.
  8. Bake for 35–60 minutes until golden. Check doneness with a toothpick.
  9. Cool the cake completely in the pan and dust with icing sugar before serving.

Notes

You can bake this cake a day in advance for deeper flavors. Serve with fresh berries or whipped cream for an extra touch.
