  • 2 cups Broccoli florets
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh Herbs (optional, e.g., parsley or dill)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: Cut them into small cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
  3. Roast for about 20-25 minutes, turning halfway through until golden brown.
  4. Melt butter in a pan over medium heat, add minced garlic, and sauté for about a minute. Add lemon juice and stir to combine.
  5. Season the salmon with salt and pepper, then coat with lemon butter sauce.
  6. Position the salmon and broccoli on the baking sheet with the potatoes, drizzle with olive oil, and season.
