Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the potatoes: Cut them into small cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast for about 20-25 minutes, turning halfway through until golden brown.
- Melt butter in a pan over medium heat, add minced garlic, and sauté for about a minute. Add lemon juice and stir to combine.
- Season the salmon with salt and pepper, then coat with lemon butter sauce.
