Description

  • 1 pint cherry tomatoes, halved
  • 2 tablespoons tomato paste
  • ½ cup dry red wine (Chianti or Sangiovese)
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon balsamic vinegar
  • ½ cup fresh basil leaves, roughly torn
  • 2 tablespoons chopped fresh parsley
  • ¼ cup grated Parmesan cheese, plus extra for serving
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: extra basil, thinly sliced red chili, or lemon wedges

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, reserving 1 cup of pasta water, then drain.
  2. Sauté the Base: Heat a large skillet over medium-high heat and add olive oil. Sauté onion for 2-3 minutes until translucent, then add garlic and red pepper flakes for 30 seconds.
  3. Add Proteins: Incorporate crumbled sausage (or shrimp) and cook until browned, about 5-7 minutes for sausage or 2-3 minutes per side for shrimp.
  4. Tomatoes and Sauce: Add the halved cherry tomatoes and tomato paste, cooking for 2 minutes, gently mashing some tomatoes.
  5. Deglaze with Wine: Pour in red wine, deglazing the pan and simmering for 2-3 minutes.
  6. Season and Combine: Add soy sauce, Worcestershire sauce, and balsamic vinegar, adjusting seasoning as needed.
  7. Combine with Pasta: Toss drained pasta into the skillet, mixing thoroughly and incorporating pasta water until desired consistency is reached.
  8. Finish with Freshness: Remove from heat and stir in basil leaves, parsley, and Parmesan until melted.
  9. Serve and Garnish: Divide among bowls and garnish with extra basil, Parmesan, red chili, and lemon wedges.
