Description

Savory sweet potatoes filled with seasoned ground beef, creamy cottage cheese, and drizzled with hot honey for a perfect sweet and spicy combo.


Ingredients

  • 2 small sweet potatoes
  • 1/2 lb ground beef (or turkey)
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika (or chili powder)
  • 2/3 cup cottage cheese
  • 1/2 avocado, sliced
  • 23 tsp hot honey (or honey + chili flakes)
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place the sweet potatoes on a baking sheet and roast for 40-50 minutes until fork-tender.
  2. Brown the ground beef in a cast-iron skillet over medium heat, seasoning with salt and smoked paprika. Cook for about 7-10 minutes.
  3. Slice the sweet potatoes in half lengthwise and fluff the insides with a fork, seasoning with salt and pepper.
  4. Spoon the seasoned beef over each sweet potato half, then add cottage cheese and avocado slices on top.
  5. Drizzle hot honey over the filled sweet potatoes.

Notes

This dish can be customized with different proteins or toppings based on preference. Make ahead and store for quick assembly during busy nights.
