Instructions
- Preheat your oven to 400°F (200°C). Grease your muffin tin generously with butter or cooking spray.
- Combine the cornmeal, all-purpose flour, sugar, baking powder, and salt in a large mixing bowl, whisking until there are no lumps.
- Whisk together the milk, eggs, honey, and melted butter in a separate bowl until well blended.
- Pour the wet ingredients into the dry ingredients. Gently stir until just combined; avoid overmixing.
- Spoon the batter evenly into each muffin cup, filling them about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly in the tin before transferring them to a wire rack.
- Drizzle with additional honey before serving.
