Description

Delightfully sweet Honey Cornbread Muffins with a tender crumb and a golden crust, perfect as a breakfast treat or a side for savory dishes.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/3 cup honey
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Grease your muffin tin generously with butter or cooking spray.
  2. Combine the cornmeal, all-purpose flour, sugar, baking powder, and salt in a large mixing bowl, whisking until there are no lumps.
  3. Whisk together the milk, eggs, honey, and melted butter in a separate bowl until well blended.
  4. Pour the wet ingredients into the dry ingredients. Gently stir until just combined; avoid overmixing.
  5. Spoon the batter evenly into each muffin cup, filling them about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool slightly in the tin before transferring them to a wire rack.
  8. Drizzle with additional honey before serving.
