Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Mix in the dry ingredients until a soft dough forms.
- Roll the dough into small balls and place them on a baking sheet, spaced apart.
- Flatten each ball slightly with your palm.
- Bake for 8-10 minutes or until edges are golden.
- Allow cookies to cool completely on a wire rack.
- Spread pink vanilla buttercream on the bottom of one cookie and sandwich with another cookie.
