Description

A delicious High-Protein Chicken Ranch Quesadilla featuring crispy edges, a creamy filling, and vibrant flavors.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 tablespoon ranch seasoning
  • Optional toppings: shredded lettuce, diced tomatoes, avocado

Instructions

  1. In a mixing bowl, combine the shredded chicken, Greek yogurt, ranch seasoning, and one Laughing Cow cheese wedge. Stir until well combined.
  2. Heat a non-stick skillet over medium heat.
  3. Place the tortilla in the skillet and spread the chicken mixture over half the tortilla.
  4. Top with the second Laughing Cow cheese wedge.
  5. Fold the tortilla over and cook for 3-4 minutes, flipping halfway through, until golden brown and cheese is melted.
  6. Serve warm, garnished with optional toppings.
