- 4 pieces Boneless, Skinless Chicken Breasts
- 1 cup Ricotta Cheese
- 1/3 cup Grated Parmesan Cheese
- 2 cups Fresh Spinach
- 1/4 cup Fresh Basil
- 1/4 cup Fresh Parsley
- 1 teaspoon Garlic Powder
- Salt & Pepper to taste
- 1 cup Marinara Sauce
- 2 tablespoons Olive Oil
- 1/2 teaspoon Crushed Red Pepper Flakes (optional)
- As Needed: Toothpicks or Kitchen Twine
Instructions
- Prepare the Chicken: Pound the chicken breasts to an even thickness—about 1/2 inch.
- Create the Filling: In a mixing bowl, combine ricotta, Parmesan, spinach, basil, parsley, garlic powder, and seasonings.
- Assemble the Rolls: Lay a chicken breast flat, spoon filling onto one end, roll tightly, and secure with toothpicks or twine.
- Sear the Rolls: Heat olive oil in a skillet, sear the rolls seam-side down for 4-5 minutes, then flip and sear the other side.
- Add Marinara Sauce: Pour marinara sauce over the rolls, cover, and simmer for 15-20 minutes until cooked through.
- Serve and Enjoy: Allow to rest before serving with extra marinara sauce.
Notes
For best results, use fresh herbs and ensure chicken is pounded evenly for consistent cooking.
