Description

Comforting chicken breasts stuffed with creamy ricotta, herbs, and spinach, seared and served with marinara sauce.


Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Garlic Powder
  • Salt & Pepper to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Crushed Red Pepper Flakes (optional)
  • As Needed: Toothpicks or Kitchen Twine

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness—about 1/2 inch.
  2. Create the Filling: In a mixing bowl, combine ricotta, Parmesan, spinach, basil, parsley, garlic powder, and seasonings.
  3. Assemble the Rolls: Lay a chicken breast flat, spoon filling onto one end, roll tightly, and secure with toothpicks or twine.
  4. Sear the Rolls: Heat olive oil in a skillet, sear the rolls seam-side down for 4-5 minutes, then flip and sear the other side.
  5. Add Marinara Sauce: Pour marinara sauce over the rolls, cover, and simmer for 15-20 minutes until cooked through.
  6. Serve and Enjoy: Allow to rest before serving with extra marinara sauce.

Notes

For best results, use fresh herbs and ensure chicken is pounded evenly for consistent cooking.
