Description

Golden-brown chicken rolls filled with creamy, herb-laden ricotta, providing a delightful culinary experience reminiscent of Italian kitchens.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the ricotta cheese, grated Parmesan, chopped parsley, chopped basil, minced garlic, salt, pepper, and Italian seasoning in a large mixing bowl.
  3. Prepare the chicken breasts by placing them between two sheets of parchment paper and gently pound them to an even thickness of about ½ inch.
  4. Spread an even layer of the ricotta mixture on each chicken breast.
  5. Roll each breast tightly from one end to the other and secure with toothpicks or kitchen twine.
  6. Heat olive oil in a skillet over medium heat and add the chicken rolls, searing until golden brown on all sides.
  7. Transfer the chicken rolls to a baking dish, pouring marinara sauce over them.
  8. Bake for 25–30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Remove toothpicks before serving and drizzle with additional marinara sauce if desired.

Notes

Can be made a day in advance. Consider using cottage cheese or different herbs for variations.
