Description

Crispy on the outside and soft on the inside, these heavenly pineapple fritters are bursting with tropical flavors and perfect for any occasion.


Ingredients

  • 1 cup All-purpose flour (Gluten-free flour can be used)
  • 1/4 cup Granulated sugar (Coconut sugar can be used for a less refined option)
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg (Can substitute with a flax egg for vegan option)
  • 1/2 cup Milk (Dairy-free milk can be used)
  • 1 whole Fresh pineapple (Sliced into rings)
  • 2 cups Vegetable oil (Canola or coconut oil can be used)
  • 1 tablespoon Additional cinnamon and sugar (for sprinkling on top)

Instructions

  1. Prepare the Pineapple: Slice your fresh pineapple into rings, ensuring they are uniform in thickness.
  2. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  3. Combine Wet Ingredients: In a separate bowl, beat the large egg and then add the milk. Mix until smooth.
  4. Create the Batter: Pour the wet ingredients into the dry ones, mixing until just combined.
  5. Heat the Oil: In your frying pan or deep fryer, heat the vegetable oil over medium heat.
  6. Fry the Pineapple: Dip each pineapple ring into the batter, ensuring it gets thoroughly coated.
  7. Cook Until Golden: Fry for 2-3 minutes on each side, or until golden brown.
  8. Drain and Coat: Remove fritters with a slotted spoon and place them on paper towels. Coat in cinnamon and sugar mixture.

Notes

Ensure oil is hot enough before frying to achieve a perfect golden crunch. Do not overcrowd the frying pan.
