- 1 small onion, diced
- 2 tablespoons olive oil

Instructions
- Peel and grate the sweet potatoes.
- Squeeze out excess moisture using a clean kitchen towel.
- Preheat the skillet over medium heat and add olive oil.
- Sauté the onion until translucent, about 3-4 minutes.
- Combine the grated sweet potatoes and seasonings in the skillet.
- Spread the potato mixture evenly across the skillet.
- Cook undisturbed for about 5-7 minutes until browned on the bottom.
- Flip the hash browns carefully and cook for an additional 5-7 minutes until crispy and golden brown.
- Serve warm and enjoy!
