Description

A delicious and healthy grilled shrimp bowl topped with fresh avocado, corn salsa, and a creamy garlic sauce.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, cooked
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 cloves garlic, minced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp, olive oil, lime juice, salt, and pepper. Toss to coat.
  3. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque.
  4. In a separate bowl, mix corn, cherry tomatoes, red onion, and cilantro to make the corn salsa.
  5. In another bowl, combine sour cream and minced garlic to create the creamy garlic sauce.
