- 2 boneless, skinless chicken breasts (about 1 lb)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup cooked brown rice or quinoa
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried dill
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, whisk together olive oil, garlic powder, onion powder, salt, and pepper. Rub this mixture over both sides of each chicken breast.
- Grill the chicken for 6-8 minutes per side, until the internal temperature reaches 165°F (75°C). Remove and let rest for 5 minutes before slicing.
- Meanwhile, bring a small pot of water to a boil. Blanch the broccoli for 2-3 minutes, then transfer to an ice bath.
- For the creamy garlic sauce, mix Greek yogurt, mayonnaise, lemon juice, minced garlic, dried dill, salt, and pepper in a bowl until smooth.
- Assemble the bowls by starting with brown rice or quinoa, followed by sliced grilled chicken, broccoli, and drizzled creamy garlic sauce. Top with Parmesan if desired.
- Serve immediately.
