Description

A nostalgic meatloaf infused with the rich flavors of garlic and Parmesan, perfect for cozy weeknight dinners.


Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs (or almond flour for gluten-free)
  • 2 eggs
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ½ cup milk
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Optional glaze: garlic butter or marinara sauce

Instructions

  1. Prepare the mixture: In a large mixing bowl, combine ground meat, breadcrumbs, eggs, minced garlic, grated Parmesan, milk, parsley, oregano, and a pinch of salt and pepper. Gently mix until combined.
  2. Shape the loaf: Transfer the meat mixture into a parchment-lined loaf pan or shape it freehand on a baking sheet.
  3. Bake: Place the meatloaf in a preheated oven at 375°F (190°C) and bake for 45–55 minutes, ensuring it reaches an internal temperature of 160°F (71°C).
  4. Optional glaze: In the last 10 minutes, brush the meatloaf with melted garlic butter or marinara sauce.
  5. Rest & slice: Let the meatloaf rest for 10 minutes before slicing.

Notes

Make-ahead tip: Prepare the mixture a day in advance and refrigerate. Avoid overmixing to maintain tenderness.
