- ½ cup breadcrumbs (or almond flour for gluten-free)
- 2 eggs
- 3 cloves garlic, minced
- ½ cup freshly grated Parmesan cheese
- ½ cup milk
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- Salt & pepper to taste
- Optional glaze: garlic butter or marinara sauce
Instructions
- Prepare the mixture: In a large mixing bowl, combine ground meat, breadcrumbs, eggs, minced garlic, grated Parmesan, milk, parsley, oregano, and a pinch of salt and pepper. Gently mix until combined.
- Shape the loaf: Transfer the meat mixture into a parchment-lined loaf pan or shape it freehand on a baking sheet.
- Bake: Place the meatloaf in a preheated oven at 375°F (190°C) and bake for 45–55 minutes, ensuring it reaches an internal temperature of 160°F (71°C).
- Optional glaze: In the last 10 minutes, brush the meatloaf with melted garlic butter or marinara sauce.
- Rest & slice: Let the meatloaf rest for 10 minutes before slicing.

Make-ahead tip: Prepare the mixture a day in advance and refrigerate. Avoid overmixing to maintain tenderness.
