Description

A comforting meal of herb-infused chicken breasts served with creamy mashed potatoes and sweet, glazed carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 cups carrots, sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon butter (for glazing carrots)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the olive oil, minced garlic, oregano, thyme, salt, and pepper in a bowl.
  3. Rub this mixture over the chicken breasts thoroughly.
  4. Place the seasoned chicken in a baking dish and bake for 25-30 minutes.
  5. Boil the diced potatoes in salted water until tender, about 15 minutes.
  6. Drain and mash the potatoes with milk and butter until creamy.
  7. Melt 1 tablespoon of butter in a skillet over medium heat.
  8. Add the sliced carrots and brown sugar, cooking until tender and glazed, about 7-10 minutes.
  9. Serve the chicken alongside the creamy mashed potatoes and glazed carrots.

Notes

Use a meat thermometer to ensure proper chicken doneness. For creamier mashed potatoes, consider using a hand mixer.
