- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves of garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 large potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- 2 cups carrots, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter (for glazing carrots)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the olive oil, minced garlic, oregano, thyme, salt, and pepper in a bowl.
- Rub this mixture over the chicken breasts thoroughly.
- Place the seasoned chicken in a baking dish and bake for 25-30 minutes.
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain and mash the potatoes with milk and butter until creamy.
- Melt 1 tablespoon of butter in a skillet over medium heat.
- Add the sliced carrots and brown sugar, cooking until tender and glazed, about 7-10 minutes.
- Serve the chicken alongside the creamy mashed potatoes and glazed carrots.
Notes
Use a meat thermometer to ensure proper chicken doneness. For creamier mashed potatoes, consider using a hand mixer.
