Description

A vibrant and refreshing salad featuring fresh corn, crumbled cotija cheese, and a tangy lime dressing, perfect for summer picnics.


Ingredients

  • 2 cups fresh corn kernels (about 34 ears of corn)
  • 1 cup crumbled cotija cheese
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Shuck the ears of corn, removing the husks and silk. Cut the kernels off the cob to get about two cups of corn.
  2. In a mixing bowl, combine the fresh corn kernels, crumbled cotija cheese, chopped cilantro, and finely diced red onion.
  3. Squeeze the juice of one lime over the mixture, then drizzle with olive oil.
  4. Season with salt and pepper to taste, and toss all ingredients together until well distributed.
  5. For enhanced flavor, consider chilling it in the refrigerator for 30 minutes before serving.

Notes

This salad is best served fresh, but can be made in advance. Store in an airtight container in the fridge for up to three days.
