Description

Crispy roasted potatoes topped with creamy feta cheese and aromatic herbs, creating a flavorful and comforting dish.


Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into wedges or chunks.
  3. Combine the olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
  4. Add the potatoes to the bowl and toss until well coated.
  5. Spread the potatoes out in a single layer on a baking sheet.
  6. Roast for 30 to 35 minutes, flipping halfway through.
  7. Remove from the oven and sprinkle feta over the hot potatoes.
  8. Return to the oven for an additional 5 minutes.
  9. Garnish with fresh parsley and serve hot.

Notes

For maximum crispiness, dry the potatoes before tossing them in oil. Avoid overcrowding the baking sheet to ensure even roasting.
