- 2 pounds Yukon Gold or red potatoes
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup feta cheese, crumbled

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into wedges or chunks.
- Combine the olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
- Add the potatoes to the bowl and toss until well coated.
- Spread the potatoes out in a single layer on a baking sheet.
- Roast for 30 to 35 minutes, flipping halfway through.
- Remove from the oven and sprinkle feta over the hot potatoes.
- Return to the oven for an additional 5 minutes.
- Garnish with fresh parsley and serve hot.
