Description

A creamy and flavorful twist on traditional potato salad, featuring deviled eggs for an extra layer of taste.

Ingredients

Scale
  • 2 pounds potatoes, peeled and diced
  • 4 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, combine the mayonnaise, mustard, apple cider vinegar, salt, and pepper.
  3. Add the cooled potatoes, chopped hard-boiled eggs, celery, and red onion to the bowl. Gently mix until well combined.
  4. Adjust seasoning if necessary and refrigerate for at least 1 hour before serving.
  5. Garnish with paprika before serving.

Notes

  • For a healthier version, you can use Greek yogurt instead of mayonnaise.
  • Feel free to add other ingredients like pickles or herbs for extra flavor.
  • This salad can be made a day in advance for better flavor.
