- 2 cups cooked shredded chicken
- 2 tablespoons honey
- 2 chipotle peppers in adobo, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1½ cups shredded Monterey Jack or mozzarella cheese
- 8 small corn tortillas
- 2 tablespoons olive oil
- ¼ cup chopped fresh cilantro
- ¼ cup diced red onion
Instructions
- Heat the skillet: First, heat a large skillet over medium heat until it’s hot but not smoking.
- Mix the chicken: In your mixing bowl, combine the cooked shredded chicken, honey, minced chipotle peppers, garlic powder, and onion powder.
- Prepare the skillet: Add olive oil to the skillet and swirl it around to evenly coat the bottom.
- Warm the tortillas: Gently warm the corn tortillas in a separate pan or microwave for a few seconds.
- Fill the tortillas: Load each warmed tortilla with a generous scoop of the chicken mixture and a sprinkle of cheese.
- Cook the tacos: Place the tacos in the skillet and press down gently with a spatula for even crispiness, cooking for about 2–3 minutes on each side until golden brown.
- Finish the tacos: Once cooked, remove them from the skillet and top with chopped cilantro and diced red onion.
- Serve hot: Best enjoyed immediately, piled high with your favorite toppings.

You can mix the chicken mixture ahead of time and refrigerate it for up to 24 hours.
