Description

Delicious crispy tacos filled with tender chicken, honey, and chipotle for a perfect blend of sweet and spicy flavors.


Ingredients

  • 2 cups cooked shredded chicken
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1½ cups shredded Monterey Jack or mozzarella cheese
  • 8 small corn tortillas
  • 2 tablespoons olive oil
  • ¼ cup chopped fresh cilantro
  • ¼ cup diced red onion

Instructions

  1. Heat the skillet: First, heat a large skillet over medium heat until it’s hot but not smoking.
  2. Mix the chicken: In your mixing bowl, combine the cooked shredded chicken, honey, minced chipotle peppers, garlic powder, and onion powder.
  3. Prepare the skillet: Add olive oil to the skillet and swirl it around to evenly coat the bottom.
  4. Warm the tortillas: Gently warm the corn tortillas in a separate pan or microwave for a few seconds.
  5. Fill the tortillas: Load each warmed tortilla with a generous scoop of the chicken mixture and a sprinkle of cheese.
  6. Cook the tacos: Place the tacos in the skillet and press down gently with a spatula for even crispiness, cooking for about 2–3 minutes on each side until golden brown.
  7. Finish the tacos: Once cooked, remove them from the skillet and top with chopped cilantro and diced red onion.
  8. Serve hot: Best enjoyed immediately, piled high with your favorite toppings.

Notes

You can mix the chicken mixture ahead of time and refrigerate it for up to 24 hours.
