- 1 ½ cups Canned or Frozen Corn
- 1 cup Shredded Cheddar Cheese
- ½ cup Shredded Mozzarella Cheese
- ½ cup All-Purpose Flour
- 1 Large Egg
- ¼ cup Breadcrumbs
- 1 teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ½ teaspoon Paprika
- ¼ teaspoon Salt
- ⅛ teaspoon Black Pepper
- Vegetable Oil or Canola Oil (for frying)
Instructions
- Drain canned corn or thaw and dry frozen corn.
- In a large mixing bowl, crack the egg and whisk until light and airy.
- Add all-purpose flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.
- Add corn kernels and mix thoroughly with a spatula until well integrated.
- Form small balls or discs from the mixture.
- For frying, heat oil in a deep frying pan to 350-375°F and fry for 2-3 minutes per side until golden brown.
- For baking, preheat oven to 400°F, place on parchment-lined baking sheet, and bake for 15-20 minutes, flipping halfway.
- Drain excess oil if fried and serve warm.
Notes
These bites can be prepared ahead of time and refrigerated. Use an air fryer for a healthier option.
