Description

Delightful, crispy bites filled with sweet corn and rich cheese, perfect for snacks or appetizers.


Ingredients

  • 1 ½ cups Canned or Frozen Corn
  • 1 cup Shredded Cheddar Cheese
  • ½ cup Shredded Mozzarella Cheese
  • ½ cup All-Purpose Flour
  • 1 Large Egg
  • ¼ cup Breadcrumbs
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Paprika
  • ¼ teaspoon Salt
  • ⅛ teaspoon Black Pepper
  • Vegetable Oil or Canola Oil (for frying)

Instructions

  1. Drain canned corn or thaw and dry frozen corn.
  2. In a large mixing bowl, crack the egg and whisk until light and airy.
  3. Add all-purpose flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Add corn kernels and mix thoroughly with a spatula until well integrated.
  5. Form small balls or discs from the mixture.
  6. For frying, heat oil in a deep frying pan to 350-375°F and fry for 2-3 minutes per side until golden brown.
  7. For baking, preheat oven to 400°F, place on parchment-lined baking sheet, and bake for 15-20 minutes, flipping halfway.
  8. Drain excess oil if fried and serve warm.

Notes

These bites can be prepared ahead of time and refrigerated. Use an air fryer for a healthier option.
