- 2 cups shredded rotisserie chicken
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup chopped cilantro
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 12 small corn tortillas
- Vegetable oil for frying
Instructions
- In a large mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, cilantro, garlic powder, cumin, chili powder, salt, and pepper. Mix until well combined and creamy.
- Warm the corn tortillas in the microwave or on a skillet to make them pliable.
- Place about 2 tablespoons of the chicken mixture along the center of each tortilla and roll them up tightly.
- Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
- Fry the taquitos in batches for 2-3 minutes on each side until golden and crispy.
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauces.
Notes
For a healthier option, consider baking or air frying the taquitos instead of frying.
