Description

Delight in the crispy texture and creamy filling of these savory chicken taquitos, perfect for any occasion.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 12 small corn tortillas
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, cilantro, garlic powder, cumin, chili powder, salt, and pepper. Mix until well combined and creamy.
  2. Warm the corn tortillas in the microwave or on a skillet to make them pliable.
  3. Place about 2 tablespoons of the chicken mixture along the center of each tortilla and roll them up tightly.
  4. Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
  5. Fry the taquitos in batches for 2-3 minutes on each side until golden and crispy.
  6. Remove from the skillet and place on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauces.

Notes

For a healthier option, consider baking or air frying the taquitos instead of frying.
