- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Vegetable oil (for frying)
- 1/2 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 brioche buns, split
- 4 cups chopped romaine lettuce
- 1/2 cup shaved Parmesan cheese
- Optional: Tomato slices
Instructions
- Marinate the chicken by whisking together the buttermilk, hot sauce, salt, and pepper. Submerge the chicken breasts and refrigerate for at least 30 minutes.
- Prepare the dredging station with a mix of flour, cornstarch, garlic powder, onion powder, paprika, and cayenne.
- Dredge the marinated chicken in the flour mixture and place coated chicken on a wire rack.
- Heat the vegetable oil in a skillet or Dutch oven until it reaches 350°F (175°C).
- Fry the chicken for about 6–8 minutes on each side until golden brown and cooked through.
- Drain the chicken on a wire rack lined with paper towels.
- Combine the dressing ingredients: mayonnaise, Parmesan, lemon juice, Dijon mustard, garlic, Worcestershire sauce, and black pepper in a bowl.
- Emulsify the dressing by whisking in olive oil until smooth.
- Toast the brioche buns lightly if preferred.
- Assemble the sandwich with dressing, lettuce, fried chicken, shaved Parmesan, and optional tomato slices.
- Serve immediately while the chicken remains hot.
Notes
For added flavor, marinate the chicken overnight. You can also air fry or bake the chicken for a healthier option.
