Description

Delightful muffins infused with the flavors of cream cheese and strawberries, perfect for breakfast or brunch.


Ingredients

  • 1 cup cream cheese, softened
  • 1 cup fresh strawberries, chopped
  • 2 cups bread cubes (day-old bread works best)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter for greasing muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the muffin tin with butter.
  2. Combine the softened cream cheese with the chopped strawberries in a mixing bowl.
  3. Whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt in another bowl.
  4. Add the bread cubes to the egg mixture and gently fold.
  5. Spoon a layer of the bread mixture into each muffin cup, followed by a scoop of the cream cheese and strawberry mixture.
  6. Crown each with more bread mixture.
  7. Bake for 18-22 minutes or until golden brown and puffed.
  8. Allow to cool before indulging.

Notes

Use day-old bread for a better texture. You can prepare the mixtures the night before for convenience.
