Description

A vibrant and refreshing salad featuring sweet corn, cherry tomatoes, cucumbers, and tangy feta, all enveloped in a creamy dressing.


Ingredients

  • 2 cups frozen sweet corn (thawed)
  • 1 cup cherry tomatoes (halved)
  • 1 cup diced cucumber
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1/4 cup fresh cilantro (chopped, optional)

Instructions

  1. In a large mixing bowl, toss together the thawed corn, halved cherry tomatoes, diced cucumber, finely chopped red onion, and crumbled feta cheese.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth.
  3. Pour the dressing over the corn mixture and gently fold everything together.
  4. If using, fold in the chopped cilantro.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve cold or at room temperature.

Notes
