- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cups all-purpose flour
- 1½ cups crushed graham crackers

- ½ tsp baking powder
- 8 oz cream cheese (softened)
- 8 oz butter (softened)
- 2½ cups powdered sugar
- 2 tsp vanilla extract
- 1¼ cups brown sugar
- ½ cup whipping cream
- 5 tbsp butter
- 1 tbsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, crushed graham crackers, salt, baking soda, and baking powder. Gradually add this to the wet mixture until just blended.
- Use a cookie scoop to portion out the dough, roll in crushed graham crackers, and flatten each dough ball.
- Bake for 8-10 minutes until edges are light golden brown. Allow to cool on a wire rack.
- For the frosting, beat cream cheese and butter until smooth, add powdered sugar, and then mix in vanilla extract.
- For the caramel drizzle, melt brown sugar and butter, add whipping cream, simmer, then stir in vanilla extract and salt.
- Drizzle the caramel over the frosted cookies and serve.
Notes
Make the cookie dough a day in advance and refrigerate. Customize with chocolate chips or nuts for extra flavor.
