Description

Indulge in these decadent cookies featuring a buttery base, creamy cheesecake frosting, and a salted caramel drizzle.


Ingredients

  • ¾ cup butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ cups crushed graham crackers
  • ½ tsp salt
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 8 oz cream cheese (softened)
  • 8 oz butter (softened)
  • 2½ cups powdered sugar
  • 2 tsp vanilla extract
  • 1¼ cups brown sugar
  • ½ cup whipping cream
  • 5 tbsp butter
  • 1 tbsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, crushed graham crackers, salt, baking soda, and baking powder. Gradually add this to the wet mixture until just blended.
  5. Use a cookie scoop to portion out the dough, roll in crushed graham crackers, and flatten each dough ball.
  6. Bake for 8-10 minutes until edges are light golden brown. Allow to cool on a wire rack.
  7. For the frosting, beat cream cheese and butter until smooth, add powdered sugar, and then mix in vanilla extract.
  8. For the caramel drizzle, melt brown sugar and butter, add whipping cream, simmer, then stir in vanilla extract and salt.
  9. Drizzle the caramel over the frosted cookies and serve.

Notes

Make the cookie dough a day in advance and refrigerate. Customize with chocolate chips or nuts for extra flavor.
