- 1 cup coconut milk
- 1 cup jasmine rice
- 1 cup chicken broth
- 1 onion, chopped

Instructions
- Heat a large pan over medium heat. Add a splash of oil and sauté the chopped onion and minced garlic until translucent.
- Add the chicken breasts to the pan, searing them until golden-brown on each side.
- Pour in the coconut milk and chicken broth, and season with salt and pepper. Stir gently.
- Bring to a simmer, cover, and cook for about 20 minutes, allowing the chicken to absorb flavors.
