Description

A creamy, fragrant coconut sauce enveloping juicy chicken served over fluffy jasmine rice. This dish is perfect for family dinners or casual gatherings.


Ingredients

  • 2 skinless, boneless chicken breasts
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Heat a large pan over medium heat. Add a splash of oil and sauté the chopped onion and minced garlic until translucent.
  2. Add the chicken breasts to the pan, searing them until golden-brown on each side.
  3. Pour in the coconut milk and chicken broth, and season with salt and pepper. Stir gently.
  4. Bring to a simmer, cover, and cook for about 20 minutes, allowing the chicken to absorb flavors.
  5. Prepare the jasmine rice according to package instructions.
  6. Shred the cooked chicken into bite-sized pieces and mix back into the sauce.
  7. Serve over fluffy jasmine rice and garnish with fresh cilantro.

Notes

Make ahead by preparing the chicken and sauce a day in advance. Can substitute chicken thighs for a juicier bite.
