- 1 lb flank steak
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice, freshly squeezed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 2 cups rice (white or brown)
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely diced
- 1 cup black beans, drained and rinsed
- 1 cup corn, cooked
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the lime juice, olive oil, minced garlic, chopped cilantro, salt, and pepper.
- Marinate the Steak: Place the flank steak in the bowl, turning to coat it completely in the marinade. Allow it to marinate for at least 30 minutes.
- Cook the Steak: Heat a cast iron skillet or grill pan over medium-high heat. Add the marinated steak and sear for about 4–5 minutes on each side until desired doneness. Let it rest for 5–10 minutes before slicing.
- Prepare the Rice: Cook your choice of rice according to package instructions and fluff it with a fork, optionally adding lime juice.
- Assemble the Bowls: Start with a scoop of rice, top with sliced steak, black beans, corn, avocado, cherry tomatoes, and red onion.
- Garnish: Sprinkle additional cilantro and serve with lime wedges.
Notes
For best flavor, marinate the steak overnight. Customize by adding grilled veggies or using different proteins.
