Description

A luxurious Chocolate Cherry Cheesecake with rich dark chocolate and tart cherries nestled in a creamy filling.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate, melted
  • 1 cup tart cherries, pitted and halved
  • 1 pre-made graham cracker crust
  • 1 tbsp cornstarch
  • 1/4 cup cherry juice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, beat the cream cheese and sugar together until smooth.
  3. Add heavy cream, vanilla extract, and cornstarch; mix until combined.
  4. Gradually add melted dark chocolate and cherry juice; mix until well blended.
  5. Gently fold in the halved cherries.
  6. Pour the cheesecake mixture into the graham cracker crust and smooth the top.
  7. Bake for 45-60 minutes until the center is set with a slight jiggle.
  8. Cool at room temperature before refrigerating for at least 4 hours.

Notes

Make-ahead recommended for better flavor development. Top with chocolate ganache or fresh fruit for a decorative touch.
