- 1 cup heavy cream
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1/2 cup dark chocolate, melted
- 1 cup tart cherries, pitted and halved
- 1 pre-made graham cracker crust
- 1 tbsp cornstarch
- 1/4 cup cherry juice
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, beat the cream cheese and sugar together until smooth.
- Add heavy cream, vanilla extract, and cornstarch; mix until combined.
- Gradually add melted dark chocolate and cherry juice; mix until well blended.
- Gently fold in the halved cherries.
- Pour the cheesecake mixture into the graham cracker crust and smooth the top.
- Bake for 45-60 minutes until the center is set with a slight jiggle.
- Cool at room temperature before refrigerating for at least 4 hours.
Notes
