Ingredients

  • 1 pound chicken breasts
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 1 red bell pepper
  • 1 cucumber
  • 1 cup shredded carrots
  • 1/4 cup fresh cilantro
  • 1/2 cup canned coconut milk
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt

Instructions

  1. Rub chicken breasts with chili powder, garlic powder, and salt.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6–7 minutes on each side until cooked through.
  3. While the chicken rests, chop the red bell pepper, cucumber, and carrots.
  4. In a bowl, whisk together coconut milk, lime juice, honey, and salt.
  5. Layer cooked rice, veggies, sliced chicken, and drizzle in bowls. Top with cilantro.
