- 4 chicken breasts
- 4 slices of ham
- 4 slices of Swiss cheese
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup cream
- 1/2 cup Swiss cheese, shredded
- Salt and pepper to taste
- Olive oil or butter
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to about ¼ inch thick using a meat mallet.
- Lay a slice of ham followed by a slice of Swiss cheese on each chicken breast.
- Roll up each breast tightly and secure it with toothpicks.
- Dredge each chicken roll in flour, dip into the beaten eggs, and coat with breadcrumbs.
- Place the rolls in a baking dish and drizzle with olive oil or a dab of butter.
- Bake for 25-30 minutes, or until cooked through and golden.
- In a small saucepan, combine cream and shredded Swiss cheese over low heat until melted.
- Serve the Chicken Blue Ribbon hot, drizzled with the creamy sauce.
Notes
You can prepare the chicken rolls up to 24 hours in advance. Optionally, use gluten-free breadcrumbs and flour for a gluten-free version.
