Description

A hearty casserole with layers of ground beef, vibrant vegetables, and a cheesy topping, perfect for family dinners or gatherings.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix, like Bisquick
  • 1 cup Water
  • Cooking Spray, like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the ground beef in a skillet over medium-high heat until browned, then drain excess fat.
  3. Prepare the biscuit dough in a mixing bowl by combining biscuit mix with water, then press it into a greased casserole dish.
  4. Bake the biscuit layer for 5-8 minutes until set and lightly golden, then remove from oven.
  5. Cook the onions and red bell pepper in the skillet with the beef for about 4 minutes until softened, then mix in taco seasoning.
  6. Assemble by layering the meat mixture over the biscuit crust.
  7. Prepare the sour cream layer by mixing sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder, then spread over the meat layer.
  8. Add dollops of salsa, then sprinkle the remaining cheese on top.
  9. Bake for 30 minutes until hot and bubbly.

Notes

This casserole is versatile; try adding black beans or using different types of cheese.
