Description

Delicious muffins with a luscious caramel flan center, perfect for any occasion.


Ingredients

  • 1 cup sugar
  • 6 tablespoons water
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin generously to prevent sticking.
  2. Create the caramel: In a small saucepan, combine the sugar and water. Cook over medium heat until golden. Quickly pour the caramel into each muffin cup.
  3. Blend the base: In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and sea salt. Blend until smooth.
  4. Incorporate the dry ingredients: Add the flour and baking powder to the blender. Blend briefly until just combined.
  5. Fill the muffin cups with the batter, filling them about two-thirds full.
  6. Bake for 25–30 minutes. Check for doneness with a toothpick.
  7. Cool the muffins, then invert onto a serving plate and serve chilled.

Notes

These muffins refrigerate well and can be made ahead of time. They can also be cooked in an air fryer.
