Ingredients

- 1 cup sugar
- 6 tablespoons water
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 ounces) evaporated milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1 cup all-purpose flour
- 1 tablespoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin generously to prevent sticking.
- Create the caramel: In a small saucepan, combine the sugar and water. Cook over medium heat until golden. Quickly pour the caramel into each muffin cup.
- Blend the base: In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and sea salt. Blend until smooth.
- Incorporate the dry ingredients: Add the flour and baking powder to the blender. Blend briefly until just combined.
- Fill the muffin cups with the batter, filling them about two-thirds full.
- Bake for 25–30 minutes. Check for doneness with a toothpick.
- Cool the muffins, then invert onto a serving plate and serve chilled.
Notes
These muffins refrigerate well and can be made ahead of time. They can also be cooked in an air fryer.
