Description

A comforting and flavorful side dish made with fluffy rice and sweet corn, enriched with buttery goodness.


Ingredients

Scale
  • 1 cup rice (jasmine, basmati, or long-grain)
  • 2 cups water
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Bring the water to a rolling boil in a heavy-bottomed pot. Add the rice and a pinch of salt, stir, cover, and reduce heat to low. Cook for about 18 minutes, until the rice is fluffy.
  2. Meanwhile, melt the butter in a sauté pan over medium heat. Once melted, add the corn and sauté for a few minutes until lightly caramelized.
  3. Remove the cooked rice from heat and fluff it with a fork. Mix in the sautéed corn and melted butter.
  4. Season with salt and pepper to taste, adjusting according to sweetness of corn.
  5. Serve warm, garnished with chopped parsley if desired.

Notes

Make-ahead tips: Prepare rice and corn separately and reheat together with butter before serving.
