A comforting and flavorful side dish made with fluffy rice and sweet corn, enriched with buttery goodness.
Ingredients

- 1 cup rice (jasmine, basmati, or long-grain)
- 2 cups water
- 1 cup corn (fresh or frozen)
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Bring the water to a rolling boil in a heavy-bottomed pot. Add the rice and a pinch of salt, stir, cover, and reduce heat to low. Cook for about 18 minutes, until the rice is fluffy.
- Meanwhile, melt the butter in a sauté pan over medium heat. Once melted, add the corn and sauté for a few minutes until lightly caramelized.
- Remove the cooked rice from heat and fluff it with a fork. Mix in the sautéed corn and melted butter.
- Season with salt and pepper to taste, adjusting according to sweetness of corn.
- Serve warm, garnished with chopped parsley if desired.

Make-ahead tips: Prepare rice and corn separately and reheat together with butter before serving.
