Description

A vibrant and creamy bruschetta dip that combines the flavors of fresh tomatoes, basil, and cheese, perfect for gatherings.


Ingredients

  • 4 Roma tomatoes, diced
  • ¼ cup chopped basil leaves
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 tablespoon lemon juice, freshly squeezed
  • More fresh basil, chopped, for garnish
  • Red pepper flakes, for garnish
  • Freshly grated Parmesan cheese, for garnish

Instructions

  1. Wash the tomatoes under cool water and dice them into small pieces. Place in a mixing bowl.
  2. Add chopped basil, minced garlic, olive oil, balsamic vinegar, and salt to the bowl. Toss gently and let marinate for 10-15 minutes.
  3. In a separate bowl, combine softened cream cheese, crumbled feta, sour cream, lemon juice, and olive oil.
  4. Mince an additional garlic clove and mix it into the cheese mixture until uniform.
  5. In a serving dish, spread the creamy cheese mixture as a base, then top with the marinated tomato mixture.
  6. Garnish with extra chopped basil, red pepper flakes, and freshly grated Parmesan cheese before serving.

Notes

Allow cream cheese to soften at room temperature before mixing. For a warm dip, bake in an oven-safe dish for 20 minutes at 350°F.
