Description

Delightful blackberry crumb bars featuring a crunchy, buttery crust and a juicy, tart blackberry filling, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh blackberries
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 inch baking dish gently.
  2. In a large mixing bowl, stir together 2 cups of all-purpose flour, 1 cup of granulated sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder.
  3. Cut in 1 cup of softened unsalted butter until the mixture resembles coarse crumbs.
  4. Add 1 teaspoon of vanilla extract and mix until just combined.
  5. Press half of this crumb mixture firmly into the bottom of your baking dish.
  6. In another mixing bowl, combine 2 cups of fresh blackberries with 2 tablespoons of lemon juice, 1/4 cup of sugar, and 1 tablespoon of cornstarch. Gently toss to coat the blackberries.
  7. Spread the blackberry mixture over the prepared crust.
  8. Crumble the remaining crumb mixture over the blackberry filling.
  9. Bake for 35-40 minutes, or until the top turns golden brown and the blackberry juices bubble.
  10. Allow to cool in the pan before cutting into bars.

Notes

Consider adding oats to the crumb mixture for extra texture. These bars can be served warm with vanilla ice cream or a dollop of whipped cream.
