Deliciously crispy Beef and Cheese Chimichangas filled with seasoned ground beef, creamy refried beans, and melted cheese, perfect for any occasion.

- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese
- 6 large flour tortillas (burrito-size)
- 2 tbsp vegetable oil (for brushing/frying)
Instructions
- Cook the ground beef and diced onion in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess grease.
- Stir in minced garlic, taco seasoning, and salsa. Simmer for 3-4 minutes.
- Lay a tortilla flat, spread refried beans down the center, and top with beef mixture and cheese.
- Fold in the sides and roll up tightly like a burrito.
- Oven Method: Preheat oven to 400°F (200°C) and bake chimichangas seam-side down on a greased baking sheet for 18-20 minutes.
- Skillet Method: Heat oil in skillet and fry chimichangas seam-side down for 2-3 minutes per side until golden.
- Serve with toppings like sour cream, guacamole, or fresh salsa.
Notes
These chimichangas can be prepared ahead of time and stored in the fridge for up to 24 hours.
