Description

Deliciously crispy Beef and Cheese Chimichangas filled with seasoned ground beef, creamy refried beans, and melted cheese, perfect for any occasion.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. Cook the ground beef and diced onion in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess grease.
  2. Stir in minced garlic, taco seasoning, and salsa. Simmer for 3-4 minutes.
  3. Lay a tortilla flat, spread refried beans down the center, and top with beef mixture and cheese.
  4. Fold in the sides and roll up tightly like a burrito.
  5. Oven Method: Preheat oven to 400°F (200°C) and bake chimichangas seam-side down on a greased baking sheet for 18-20 minutes.
  6. Skillet Method: Heat oil in skillet and fry chimichangas seam-side down for 2-3 minutes per side until golden.
  7. Serve with toppings like sour cream, guacamole, or fresh salsa.

Notes

These chimichangas can be prepared ahead of time and stored in the fridge for up to 24 hours.
