Description

Delicious BBQ Chicken Coleslaw Wraps wrapped in soft flour tortillas, combining smoky grilled chicken and fresh coleslaw.


Ingredients

  • 2 boneless chicken breasts or thighs
  • 1/2 cup barbecue sauce
  • 2 cups green or purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1/4 cup mayonnaise
  • 1/4 cup ranch dressing
  • 4 large flour tortillas
  • 1 avocado, sliced (optional)
  • 1/2 cup pickled red onions (optional)
  • 1 jalapeño, sliced (optional)
  • Chips (for serving)
  • Fresh fruit salad (for serving)

Instructions

  1. Grill the chicken: Season chicken with salt and pepper, preheat the grill, and cook for 6-7 minutes per side until internal temperature reaches 165°F. Toss with barbecue sauce and let rest before slicing.
  2. Make the coleslaw: Combine shredded cabbage and carrots in a bowl. Add mayonnaise and ranch dressing, stirring until well-coated. Season with salt and pepper.
  3. Warm the tortillas: Heat tortillas in a skillet on low for about 30 seconds per side or microwave wrapped in a damp paper towel for 20 seconds.
