  • 2 cups vanilla wafer cookies, finely crushed
  • 1/3 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 medium ripe bananas, mashed
  • 1 (3.4 oz) package instant banana pudding mix
  • 1 cup cold milk
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 325°F (163°C). Line your 9×9-inch baking dish with parchment paper.
  2. Prepare the crust: In a medium bowl, mix the vanilla wafers and melted butter. Press the mixture evenly into the bottom of the baking dish.
  3. Make the cheesecake filling: In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each.
  4. Incorporate the mashed bananas into the cream cheese mixture and spread it over the crust.
  5. Create the pudding layer: In another bowl, whisk the banana pudding mix with cold milk until it thickens, then spread it over the cheesecake layer.
